I love that Maya now has the ‘ThinkHeart’ Whole Wheat Pancake Mix. It is a perfect treat for our family’s quest to eating healthier foods this 2011. This is actually the first time I have encountered a pancake mix that is made of whole wheat and as I checked out the many recipes in www.themayakitchen.com, I found this Whole Wheat Malunggay Pancake that I hope to try at home very soon.
First off, studies show that whole wheat reduces the risk of heart disease, lowers blood pressure, contains antioxidants, reduces the risks of certain types of cancer and aids in weight loss. Maya ‘ThinkHeart’ Whole Wheat Pancake Mix is also cholesterol free, has zero gram trans fat and uses muscovado sugar which is high in potassium, calcium, magnesium and iron. Shifting to healthier foods made easy, I should say.
Here is the Malunggay Pancake Recipe:
¼ cup egg whites (approx. 2 pieces eggs-reserve the egg yolks for future use)
tablespoons oil
¾ cup water
1 package MAYA ‘ThinkHeart’ Whole Wheat Hotcake Mix 200g
½ cup malunggay leaves, chopped
Procedure:
In a bowl, slightly beat egg whites. Add in oil, water and MAYA ‘ThinkHeart’ Whole Wheat Hotcake Mix. Stir until smooth, no lumps.
Incorporate malunggay leaves.
Pour ¼ to 1/3 cup batter onto preheated, slightly greased griddle or pan.
Cook until bubbly.
Turn to cook the other side. Repeat procedure with the remaining batter.
Serve with sugar-free syrup or jam.
Yield: 6 to 7 hotcakes

I eat bread and all sorts of pastries, which usually contains wheat. I ate this for breakfast for the first time and suddenly got this weird allergic reaction to me, same as having a wheat allergy symptoms. Tightening of the throat, random itch, red spots, nauseous, funny crumbling in my tummy and out of focus.
