Back in the day, preparing corned beef will always be with just hash. I did switch to mojos from time to time when I get bored. Then the taste of the Corned Beef Bulalo from our staycation at The Boutique gave me an idea to cook Nilagang Corned Beef, my version of one our best-loved Filipino recipes, “Nilagang Baka.” I love it best that I could throw in lots of veggies in it as opposed to just plain hash or mojos. 🙂

We have been choosing to eat healthy (for the most part), so this Nilagang Corned Beef appeals to all of us as we get to enjoy the goodness of the tender, slow-cooked flavor of Swift Premium Corned Beef, complimented by these greens, onions and potatoes.

- 2 cans Swift Premium Corned Beef
- 2 sheaves bok choy or pechay
- 4 pieces potatoes quartered
- 1 bunch green beans (Baguio Beans)
- 1 large red onion quartered
- 5 cups water
- salt and pepper to taste
- Boil the water in a large cooking pot.
- Add the onion.
- Add the Corned Beef and the potatoes.
- Cook until the potatoes are just right.
- Sprinkle salt and pepper. Stir.
- Throw in the sheaves of bok choy and green beans.
- Cover and turn the heat off right away.
- Keep the pot covered for 5 minutes more for the rest of the veggies to get cooked.
- Serve and Enjoy!
