Behold, my first ever attempt at Lechong Paksiw and it was a success! By the looks and ravings and all the kisses I got from my dear husband, there is just no denying. Making this recipe as one of them that’s noteworthy. The lechon that I used was our take home from our Davao trip from Auntie Tonette. Thanks, Auntie! A whole chunk of unchopped lechon I stashed away in the freezer as soon as we got home.
For the Lechon Paksiw, here’s exactly how I had it done:
1. Dissolved one beef cube in 2 cups of water and bring to boil.
2. Threw in a huge bulb of chopped onions and minced garlic.
3. Added black pepper and soy sauce.
4. Dunked in the lechon and had it simmer for 30 minutes.
5. Poured half a cup of vinegar and left it alone until it boiled.
5. Stir.
6. Added half a cup of sugar and a whole bottle of Mang Tomas lechon sauce.
7. Salt to taste.
I did ask around how to go about this recipe and all of them said I would need bay leaves. and pepper corns. But because I forgot to buy them from the supermarket the night before, I did not bother with the bay leaves and used black pepper instead and it turned out just fine. My husband even raved that it is the best lechon paksiw he had ever tasted in his entire life. I did have to wipe off all the oil from my cheek from all the kisses I got for my reward. He kept on asking me how I did it so I might as well jot my Lechon Paksiw recipe down, which can very well serve as my future reference too. 🙂
scrumptious! bay leaf’s used for added flavoring. without it, lechon paksiw’s gonna be the “bida” dish come eating time. i missed this recipe. i don’t care if it’s too high on fats, haha. basta masarap yan, pramiz 🙂
